Method
Roll out pastry and line a 25-30cm flan ring.
Bake blind
in a hot oven for 10 minutes.
Arrange the shrimps on the bottom of the pastry case.
Beat the eggs with the cream, add seasonings to taste, red pepper and spring
onions, and pour into pastry case.
Top with mussels, dust with paprika.
Bake in a
moderate oven for 20-25 minutes or until filling sets.
Cover flan with foil if
mussels begin to dry out. |
