Albacore Tuna:
Albacore Tuna is the only tuna that can
be canned under the "white meat" label. It is the most
expensive tuna to buy.
Albacore tuna meat is very delicate,
and it is best cooked quickly to avoid overcooking.
Tuna can be seared, barbecued, baked,
steamed and fried, as well as cured in citrus juice or
rolled raw in a favourite sushi recipe. With a mild taste
and a lovely colour that turns from rosy pink to ivory white
when cooked
